Lean1 Squash Muffin

Squash Muffin
You will need:
  • 2 scoops Lean1 Vanilla powder
  • 2 cups whole flour
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 1 egg
  • 1 cup skimmed milk
  • 1/4 cup olive oil
  • 1 cup shredded squash
Directions
  1. Preheat oven to 400 degrees F (205 degrees C). Stir together the Lean1 vanilla powder, whole flour, baking powder, salt and shredded squash in a large bowl. Make a well in the middle. Beat the egg in a small bowl. Stir in milk and olive oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened. Pour the batter into paper lined muffin pan cups. Bake for 25 minutes. Serve and enjoy!
